These monster cookie bars are my take on the classic monster cookies that everyone loves. Instead of a cookie, you get a thick and chewy bar of monster goodness. They are packed with fiber and protein from the oats and the peanut butter, making them a good option for energy too. They’re one of my favorite sweet snacks!

- 1 cup creamy peanut butter
- 2 large eggs
- ¼ cup coconut sugar
- ¼ cup granulated sugar
- 2 teaspoons pure vanilla extract
- 1½ cups thick-cut old-fashioned rolled oats
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ½ cup semisweet chocolate chips
- ½ cup M&M's candies

Instructions
- Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper and set aside.
