How to Make a healthy PB&J Granola Parfait for Breakfast or Dessert

These PB&J granola parfaits are best enjoyed soon after they are made so that the layers stay separated. They will keep well in the fridge, covered, for a day or two, but the granola will start to soften.
My preferred yogurt to use in this recipe is vanilla Greek yogurt, but use whatever you like or have on hand. Greek yogurt contains more protein than plain, so it’s a great option for breakfast. Plain yogurt will do the job nicely, and berry-flavored yogurt will work great.
If you like your breakfasts on the sweeter side, you can drizzle over some honey or maple syrup to finish off the parfaits, or even mix a little into the yogurt.
I like to use peanut granola for that PB&J flavor, but you can use whatever you have to hand. This peanut butter granola would be perfect! You can use plain granola and mix in some peanuts, and fruity ones work great too.
