Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
In a large bowl, whisk the flour, baking powder, and pudding mix together. Set aside.

In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugar together until light and fluffy, about 2 minutes.

Add the eggs and vanilla and beat until well combined, about 30 seconds.

Add the dry ingredients to the wet ingredients and mix well.
Gently fold in the chocolate chunks with a rubber spatula.

Working in batches, use a 2-tablespoon-sized cookie scoop to scoop cookie dough onto the prepared baking sheet.
Bake for 9-10 minutes, until the edges are just set.
Let the cookies cool for 2-3 minutes on the baking sheet before transfering to a cooling rack.
