Ingredients

  • 1 cup creamy peanut butter 262 grams
  • 2 large eggs 100 grams
  • ¼ cup coconut sugar 43 grams
  • ¼ cup granulated sugar 61 grams
  • 2 teaspoons pure vanilla extract 8 grams
  • 1 ½ cups thick cut old-fashioned rolled oats 195 grams
  • ½ teaspoon baking soda 3 grams
  • ½ teaspoon kosher salt
  • ½ cup semisweet chocolate chips 93 grams
  • ½ cup candy-coated chocolate candies 105 grams, such as M&M's

Instructions

  • Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper and set aside.
  • In a medium bowl, using a hand mixer, beat the peanut butter and eggs together until well-combined.

  • Mix in the coconut sugar and granulated sugar. Add the vanilla and mix to combine. The dough will be thick and sticky.

  • Stir in the oats, baking soda, and salt.

  • Fold in the chocolate chips and chocolate candies, saving a few to sprinkle on top if desired.

  • Spread the mixture evenly into the prepared baking pan and bake for 20-25 minutes, or until just beginning to brown around the edges.

  • Allow the bars to cool to room temperature before cutting into squares.

Notes

  • You can sprinkle more of the chocolate chips and chocolate candies on top of the dough after you’ve spread it out on the baking dish.
  • Allow the bars to cool before cutting into them.
  • You can use chunky peanut butter to give these cookies even more crunchy texture to bite into.
Storage: Store monster cookie bars in an airtight container at room temperature for up to 3 days, in the refrigerator for up to 1 week, or in the freezer for up to 3 months.
