In a large bowl, combine the rice Chex, corn Chex, pretzels, Cheerios, peanuts and M&M’s. Set aside.
2½ cups rice Chex, 2½ cups corn Chex, 2½ cups pretzels, 2½ cups Cheerios, 2 cups peanuts, 1 cup red and green M&M's
Place the white chocolate chips into a microwave-safe bowl. Heat in 30-second intervals, stirring after each time, until completely melted. This should take about 1½-2 minutes.
5 cups white chocolate chips
Pour the melted white chocolate into the Chex mixture and toss until completely coated.
Spread the mixture onto 1 or 2 parchment lined baking sheets. Sprinkle with red and green sprinkles.
1 tablespoon red sprinkles, 1 tablespoon green sprinkles
Let set until hardened, about 20 minutes. Once set, break up into small chunks and serve.
Notes
Rice Chex/Corn Chex - Either or can be used in place of the other or you can substitute in your favorite crispy cereal.
Sprinkles - These, again, are to add to the festive look but can be completely omitted. Feel free to switch out the sprinkles to match any holiday!
This sweet treat makes a great gift! Package in mason jars or holiday tins with pretty ribbon and a note.
Once the white chocolate has been mixed in and the Chex mix is layered onto sheet trays, you can keep tossing it to avoid large clumps of the mixture.
Storage: Store Christmas Chex mix in an airtight container at room temperature for up to 1 week or in the freezer for up to 3 months.
