Easy to make with 5 ingredients, this zingy and sweet lime buttercream frosting is perfect for all your decorating needs. Simple to make and ready to use in minutes.
1½cupsunsalted butter339 grams, room temperature (3 sticks)
6cupspowdered sugar678 grams
1lime juiced and zested (about 2 tablespoons juice and 2 teaspoons zest)
⅛teaspoonkosher salt
Instructions
In the bowl of a stand mixer fitted with the whisk attachment, combine all of the ingredients. Whip on low until the powdered sugar is about halfway incorporated, about 1 minute. If you whip at a higher speed before the powdered sugar is a little incorporated, it will fly out of the bowl.
Increase the mixer speed to medium high and whip for another 30 seconds before increasing it to high. Whip for 3-4 minutes to allow the powdered sugar to dissolve into the butter and for it to get fluffy.
Frost your cupcakes or cake and enjoy! (We love to use this frosting on these fun Pinata Cupcakes)
Notes
Start your stand mixer on low before increasing it to a high speed. If you start it high, you will get clouds of powdered sugar all over your kitchen.
Use fresh lime juice rather than bottled for the zingiest flavor. For a milder lime flavor, you can leave out the zest.
This recipe makes enough for 2 cups of frosting.
Storage: Store lime buttercream in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 6 months.
