Ingredients

  • 2 cups heavy cream 454 grams
  • 14 ounces sweetened condensed milk 396 grams (1 can)
  • 2 ounces cream cheese 57 grams, room temperature (¼ block)
  • 1 teaspoon pure vanilla extract 4 grams
  • ½ cup crushed graham crackers 71 grams

Instructions

  • In the bowl of a stand mixer fitted with the whisk attachment, beat the heavy cream, starting on low speed and gradually working up to high speed, until it becomes thick and forms stiff peaks.

  • Add the sweetened condensed milk, cream cheese, and vanilla extract and fold them into the cream gently-- you don’t want to deflate the whipped cream.

  • Fold in the graham crackers.
    ½ cup crushed graham crackers
  • Transfer the mixture to a loaf pan or silicone ice cream tub and wrap it tightly with plastic wrap.
  • Place it in the freezer for at least 12 hours, preferably overnight.
  • Scoop and serve with your choice of toppings.

Notes

  • If you don’t have a silicone ice cream tube to use, you can always use a loaf pan to shape your ice cream.
  • Add different extras to your ice cream if you’d like, such as chopped nuts, chocolate syrup, and sprinkles.
Storage: Store cheesecake ice cream in an airtight container in the freezer for up to 1 week.
