Ingredients

  • 14 tablespoons unsalted butter 198 grams, room temperature (1¾ sticks)
  • 1 cup granulated sugar 200 grams
  • 2 large eggs 100 grams, room temperature
  • 1 teaspoon pure vanilla extract 4 grams
  • 12 ounces chocolate chunks 340 grams

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.

  • In a large bowl, whisk the flour, baking powder, and pudding mix together. Set aside.

  • In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugar together until light and fluffy, about 2 minutes.

  • Add the eggs and vanilla and beat until well combined, about 30 seconds.

  • Add the dry ingredients to the wet ingredients and mix well.

  • Gently fold in the chocolate chunks with a rubber spatula.

  • Working in batches, use a 2-tablespoon-sized cookie scoop to scoop cookie dough onto the prepared baking sheet.

  • Bake for 9-10 minutes, until the edges are just set.
  • Let the cookies cool for 2-3 minutes on the baking sheet before transfering to a cooling rack.

Notes

  • Once you’ve prepared the cookie dough, be sure to bake the cookies. It’s not the kind of dough that you’re going to want to save for later.
  • Feel free to add other ingredients to your cookies, such as sprinkles or peanut butter morsels to go with the chocolate.
