No Churn S'mores Ice Cream Recipe

This easy no-churn ice cream is filled with chocolate chips, marshmallow, and crushed graham crackers for a tasty s'mores inspired dessert!

Equipment

  • Hand Mixer or Stand Mixer
  • 9x5-inch Loaf Pan

Ingredients

  • 2 cups heavy cream
  • 14 ounces sweetened condensed milk (1 can)*
  • 1 teaspoon pure vanilla extract
  • ½ cup crushed graham crackers (about 4½ cracker sheets)
  • ½ cup mini marshmallows **
  • ½ cup mini chocolate chips ***

Instructions

  • Using a stand mixer fitted with the whisk attachment (or a hand mixer), beat the heavy cream. Start on low speed and gradually work up to high speed, beating the cream until it forms stiff peaks, about 3 minutes.

  • Add the sweetened condensed milk and vanilla extract. Fold them into the whipped cream gently so the cream doesn't deflate.

  • Add the graham crackers, mini marshmallows, and chocolate chips, and fold them in gently.

  • Transfer the mixture to a loaf pan or silicone ice cream tub, and wrap it tightly with plastic wrap.

  • Place it in the freezer for at least 12 hours, preferably overnight.
  • Scoop and serve with your choice of toppings.

Notes

*Be sure to use sweetened condensed milk for this no-churn ice cream to get a smooth and creamy texture. Evaporated milk will not work as well without churning.
**If you only have regular marshmallows on hand, cut them into quarters before mixing into the ice cream.
***I used mini chocolate chips, but feel free to use whatever you have on hand. Or mix in chopped candy bar pieces!
Becky's Top Tips:
  • Add extra mix-ins to customize this ice cream! Try chopped cookies, candy bars, Oreos, or M&M's.
  • I recommend freezing your ice cream in a metal loaf pan for the best results. It will freeze faster that way.
  • Cover the top of the ice cream with plastic wrap or wax paper pressed directly on the surface of the ice cream to help prevent ice crystals from forming.
  • To soften hard ice cream, let it sit out on the counter for 10 minutes before scooping.
Storage: Store s'mores ice cream in an airtight container in the freezer for up to 1 month.
