Ingredients

For the Muffins:

  • cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup granulated sugar
  • 2 cups fresh strawberries chopped*
  • 1 cup milk room temperature
  • ½ cup vegetable oil
  • 2 large eggs room temperature

For the Streusel Topping:

  • 4 tablespoons unsalted butter melted;½ stick
  • cup brown sugar
  • cup granulated sugar
  • ½ cup all-purpose flour

Instructions

  • Preheat oven to 350°F and line two 12-count muffin tins with paper liners. Set aside.
  • In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and granulated sugar with a whisk.

  • Add the chopped strawberries, and toss until they are well coated.

  • In a separate medium mixing bowl, whisk the milk, vegetable oil, and eggs together.

  • Add the wet ingredients to the dry ingredients, and mix gently with a spoon until completely combined.

  • Evenly distribute the batter among the 12 cups. Fill each about ⅔ of the way. Set aside.

  • Add all the streusel topping ingredients to a small mixing bowl, and mix with a fork until well combined.

  • Sprinkle the streusel evenly over the muffin batter.

  • Bake for 17-20 minutes, or until the topping is golden and a toothpick can be inserted and come out clean.

Notes

*To use frozen berries, thaw them first, then press out any moisture.
Becky's Tops Tips:
  • If you don't have muffin liners, be sure to coat the wells with butter or non-stick spray.
  • Measure the flour using the spoon-and-level method to avoid dry, dense muffins.
  • Tossing the strawberries in with the dry ingredients helps prevent them from sinking to the bottom of the batter.
  • You can skip the streusel topping completely if you prefer. Sprinkling them with Turbinado sugar is a great finish too.
Storage: Store strawberry muffins in an airtight container at room temperature for up to 4 days, in the refrigerator for up to 1 week, or in the freezer for up to 2 months.
