These candy corn filled Rice Krispie treats are the perfect no bake dessert to make for Halloween, or make them with leftover candy from trick or treating!

Equipment

  • Kitchen Scale (optional)

Ingredients

  • 2 tablespoons salted butter (¼ stick)
  • cups mini marshmallows *
  • 1 teaspoon pure vanilla extract
  • 4 cups Rice Krispies cereal **
  • 1 cup candy corn ***
  • Halloween sprinkles optional

Instructions

  • Line an 8x8-inch pan with parchment paper. Set aside.

  • In a large pot set over low heat, melt the butter.
    2 tablespoons salted butter
  • Add in the marshmallows and allow them to melt completely, stirring constantly so they don’t burn.
    2½ cups mini marshmallows

  • Remove from the heat and stir in the vanilla and cereal.
    1 teaspoon pure vanilla extract, 4 cups Rice Krispies cereal

  • Transfer the rice krispie mix to the prepared pan and spread it into an even layer. Top with candy corn and sprinkles.

  • Place another sheet of parchment paper on top and press down firmly to pack the rice krispies-- be careful, they will be hot!
  • Set the rice krispies aside at room temperature to cool completely, about 1 hour. Slice and enjoy!

Notes

*If you only have regular-sized or jumbo marshmallows, simply cut them into small pieces for easier melting.
**You can use any variety of Rice Krispies cereal.
*Don't have (or don't like) candy corn? Swap in another candy, like M&Ms or chocolate bar pieces.
Tips:
  • Don't heat up the marshmallow mixture too much. If it's too hot, your end result will be hard, instead of soft/chewy treats. 
  • Always stir the cereal off the heat to prevent sticky clumps.
  • Don’t press the mixture too firmly, or your treats will turn out hard.
  • Use parchment paper on top when pressing to avoid sticking.
  • For the best color, let the treats cool for 5-10 minutes before adding candy corn or sprinkles so they don’t melt.
  • For extra Halloween flair, drizzle melted white chocolate and top with more candy corn before serving.
  • I'd avoid putting these treats in the fridge. They'll get pretty hard and lose their desired consistency.
  • Add a slice of bread or a few marshmallows to the storage container to keep your treats soft longer.
