Let cool completely, then serve.
Notes
*While any pretzel will work, I recommend using pretzel snaps or classic twists. They're the perfect size!**If you can't find Rolos, unwrapped soft caramels, Hershey's Kisses, mini Reese's Peanut Butter Cups, or any other mini candy bar will work.***Try cashews, almonds, or even toasted pumpkin seeds for a nut-free option.Tips:
The Rolos are ready when they look shiny and slightly slumped, not melted flat. That’s the sweet spot where the caramel is soft enough to press but not runny.
Work fast so that the Rolos/candies don't have a chance to set back up!
Use the pecan to press straight down instead of twisting; it keeps the caramel centered and prevents the chocolate from cracking.
Cool these candies at room temperature the counter, not in the fridge. Rapid cooling can cause the chocolate to bloom (turn dull or streaky).
Sprinkle sea salt, crushed peppermint, or holiday sprinkles on top before the chocolate sets.
For an extra flair, drizzle the finished turtles with caramel or chocolate sauce.
Microwave Instructions: Arrange the pretzels on a parchment-lined, microwave-safe plate and top each with an unwrapped Rolo. Microwave on medium power (50%) for 20-30 seconds, just until the Rolos look shiny and slightly softened (not melted). Quickly press a pecan half into each Rolo, then let cool at room temperature or chill for 5-10 minutes to set. Work in batches.Storage: Store pretzel and Rolo turtles in an airtight container at room temperature for up to 1 week, in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.
