Notes

*While any pretzel will work, I recommend using pretzel snaps or classic twists. They're the perfect size!
**If you can't find Rolos, unwrapped soft caramels, Hershey's Kisses, mini Reese's Peanut Butter Cups, or any other mini candy bar will work.
***Try cashews, almonds, or even toasted pumpkin seeds for a nut-free option.
Tips:
  • The Rolos are ready when they look shiny and slightly slumped, not melted flat. That’s the sweet spot where the caramel is soft enough to press but not runny.
  • Work fast so that the Rolos/candies don't have a chance to set back up!
  • Use the pecan to press straight down instead of twisting; it keeps the caramel centered and prevents the chocolate from cracking.
  • Cool these candies at room temperature the counter, not in the fridge. Rapid cooling can cause the chocolate to bloom (turn dull or streaky).
  • Sprinkle sea salt, crushed peppermint, or holiday sprinkles on top before the chocolate sets.
  • For an extra flair, drizzle the finished turtles with caramel or chocolate sauce.
Microwave Instructions: Arrange the pretzels on a parchment-lined, microwave-safe plate and top each with an unwrapped Rolo. Microwave on medium power (50%) for 20-30 seconds, just until the Rolos look shiny and slightly softened (not melted). Quickly press a pecan half into each Rolo, then let cool at room temperature or chill for 5-10 minutes to set. Work in batches.
Storage: Store pretzel and Rolo turtles in an airtight container at room temperature for up to 1 week, in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.
