Instructions
Using a stand mixer or hand mixer, whip the heavy cream, 2 tablespoons sugar, and ½ teaspoon vanilla extract together until the mixture forms stiff peaks.
1½ cups heavy whipping cream, 2 tablespoons granulated sugar, ½ teaspoon pure vanilla extract
Add the sliced strawberries and remaining 2 tablespoons of sugar to a bowl and stir well. Taste and add more sugar if desired.
Add half of the strawberries to a blender or food processor and blend until smooth.
Combine the pureed strawberry with the remaining sliced strawberries.
Gently fold the strawberries into the whipped cream.
This will turn the whipped cream into a light pink color. If you prefer, you can keep the berries and cream separate.
In small glasses or dishes, add a couple spoonfuls of the strawberries and cream mixture; or alternate layers of each.
Chill in the refrigerator until ready to serve.
Notes
*Instead of making your own whipped cream, you can simply use a stabilized whipped topping, like Cool Whip.**Fresh strawberries work best, but thawed frozen berries can be used instead. This dessert can also be made with raspberries, blueberries, or another fruit.Becky's Top Tips:
Adding sugar to the berries (macerating) causes them to release juice, which creates a syrupy consistency. You can start this process ahead of time, and let them macerate in the fridge for a few hours, or overnight.
Let them chill in the fridge until you're ready to serve. If they get warm, the cream will start to weep.
Storage: This strawberry fool dessert is best served immediately after assembling, but can be stored in the fridge overnight.
