Strawberry Fool Recipe
Equipment
- Hand Mixer or Stand Mixer
- Food Processor or Blender
Ingredients
- 1½ cups heavy whipping cream *
- 4 tablespoons granulated sugar divided; plus more to taste
- ½ teaspoon pure vanilla extract
- 3 cups fresh strawberries sliced**
Instructions
- Using a stand mixer or hand mixer, whip the heavy cream, 2 tablespoons sugar, and ½ teaspoon vanilla extract together until the mixture forms stiff peaks.1½ cups heavy whipping cream, 2 tablespoons granulated sugar, ½ teaspoon pure vanilla extract
- Add the sliced strawberries and remaining 2 tablespoons of sugar to a bowl and stir well. Taste and add more sugar if desired.3 cups fresh strawberries, 2 tablespoons granulated sugar
- Add half of the strawberries to a blender or food processor and blend until smooth.
- Combine the pureed strawberry with the remaining sliced strawberries.
- Gently fold the strawberries into the whipped cream.
- In small glasses or dishes, add a couple spoonfuls of the strawberries and cream mixture; or alternate layers of each.
- Chill in the refrigerator until ready to serve.
Notes
- Adding sugar to the berries (macerating) causes them to release juice, which creates a syrupy consistency. You can start this process ahead of time, and let them macerate in the fridge for a few hours, or overnight.
- Let them chill in the fridge until you’re ready to serve. If they get warm, the cream will start to weep.
Use Another Fruit for this Creamy Fool Dessert!
A “fool” is a traditional British dessert that is really as simple as whipped cream and fruit. Using strawberries, raspberries, and blackberries is pretty common, but other fruits work just as well. I think fresh peaches would be so delicious for summer! The trick is adding sugar to the fruit to macerate, then blending to create a pureed or compote-like consistency. Fold it into the whipped cream, and it’s ready to eat!
How to Store
This strawberry fool dessert is best served fresh after making and assembling. However, the fruit and whipped cream (combined or separately) can be stored covered in the refrigerator for up to 24 hours.
