Watergate Salad is one of those retro desserts that always looks so dreamy and delicious. I just love that pastel green color! Also known as pistachio fluff or pistachio delight (among many other names), this creamy fruit salad is loaded with pistachio pudding, tart pineapple chunks, squishy marshmallows, Cool Whip, and crunchy nuts. And let me tell you, it truly does taste as good as it looks. Sweet, creamy, and refreshing, this salad is perfect for Easter, potlucks, BBQs, and more!

Pistachio Pudding Fluff with Marshmallows and Pineapple

This fluffy green pistachio salad recipe is one of those Southern-Midwest desserts that just feels like home to me. Not an Easter goes by when I don’t see this sweet “side dish” on the table at someone’s house. Much like the classic Ambrosia salad, this delightful Watergate salad is a simple concoction of whipped topping, marshmallow, and fruit. But this one is the most beautiful shade of green thanks to a box of pistachio pudding mix, with a bit of crunch from a smattering of chopped nuts.

Made with 5 simple ingredients, no baking, and plenty of chillin’, this dump-and-go dessert is the perfect thing to bring to the potluck. And the taste is sure to bring up some nostalgia!

Don’t Rush the Chilling!

While you can quickly chill this salad in just an hour, I recommend letting it chill overnight for the best texture. When you first mix it, the marshmallows are still a bit chewy, and the pudding is soft. After 1-2 hours, the salad will be set. But after 12 hours, the pudding mix gets fully hydrated, and the marshmallows soak up the cream. The salad gets a wonderful, mousse-like texture that takes the whole experience to another level!

Watergate Salad Recipe

This classic Watergate salad is a creamy, nostalgic dessert made with just 5 simple ingredients. Light and airy pistachio fluff combines pudding, sweet pineapple, and marshmallows for the perfect potluck side dish.

Ingredients

  • 10 ounces crushed pineapple with juice (1 can)*
  • 1 cup mini marshmallows **
  • 3.4 ounces instant pistachio pudding mix (1 box)***
  • ½ cup chopped nuts pecans, walnuts, or pistachios
  • 1½ cups whipped topping thawed

Instructions

  • In a large bowl, combine the crushed pineapple with juice, mini marshmallows, instant pudding mix, and nuts, mixing until well combined.

  • Gently fold in the whipped topping until combined.

Notes

*Feel free to swap some or all of the pineapple for mandarin oranges and/or maraschino cherries.
**You can also use regular marshmallows cut into quarters.
***You can also swap the pistachio instant pudding for lemon or vanilla.
Tips:
  • Add the pineapple and juice to your bowl; the juice helps hydrate the pudding mix and soften the marshmallows.
  • Use the dry pudding mix as is; do not prepare it first!
  • If your pudding mix isn’t green, you can add a drop or two of green food coloring to achieve that pastel color.
  • Optionally toast the nuts for a few minutes in a 350°F oven to keep them crunchier.
  • Once you add the whipped topping, stir gently to avoid deflating it.
  • Taste the salad and add a splash of lemon juice if it tastes too sweet.
  • Chill the salad for a full 12 hours for the best flavor and texture.
  • Top individual servings with more whipped topping and a fresh cherry just before serving.
Make-Ahead: I like to make this salad the day before I plan to serve it so it has plenty of time to chill and for the flavors to mix.
Storage: Store watergate salad in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Variations to Try

There are so many fun variations to this chilled pistachio salad! Try swapping out the pineapple for some mandarin oranges and maraschino cherries. Add sweetened shredded coconut or different mixed nuts for a change of pace. You could even swap the pistachio pudding for lemon or vanilla pudding!

How to Store and Freeze

Store leftover Watergate salad in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months. Let thaw overnight in the refrigerator before serving cold.

    I haven’t made this but my husband likes all things jello! Can I swap the cool whip for whipped cream? Is there anything else you might suggest?

      Cool Whip works best because it will hold, stay fluffy, and it won’t weep (leak moisture). We have a stabilized whipped cream recipe you can follow using heavy creamy, powdered sugar, and pudding mix. If simply using whipped heavy cream, I would recommend only making this right before serving.
