Prepare an 8x8-inch baking pan by lining with parchment paper. Set aside.
In a large bowl, stir together the oats, crushed peanuts, cinnamon, and sea salt until well-combined. Set aside.
2½ cups thick old-fashioned rolled oats, ½ cup crushed unsalted peanuts, 1 teaspoon ground cinnamon, 1 teaspoon kosher salt
In a small saucepan, heat the peanut butter, honey, and coconut oil over low heat until melted and smooth. Remove from heat and stir in the vanilla extract.
1 cup creamy peanut butter, ½ cup honey, 2 tablespoons coconut oil, 1 teaspoon pure vanilla extract
Pour the peanut butter mixture over the oat mixture and stir well to combine.
Fold in the semisweet and white chocolate chips.

Press the mixture into prepared pan. You’ll want to press fairly hard to make sure the bars stick together.
Sprinkle with a few extra chocolate chips if desired and press them gently onto the bars to stick.
Chill for 1-2 hours before cutting into bars. Keep refrigerated for best results.
