My kids and I love to make ice cream by hand instead of getting out the machine. It’s so easy, requires less cleaning, and this no churn method feels more like a fun craft project! Our last frozen dessert adventure was strawberry cheesecake ice cream, and this time Jack requested s’mores.
Heavy cream and sweetened condensed milk creates a sweet and creamy base that sets up perfectly in the freezer. For the ice cream add-ins, we used the classic s’mores trifecta: chocolate, marshmallows, and graham crackers! The hardest part of this dessert is waiting for it to freeze, but every bite is worth it!

No Churn S’mores Ice Cream Recipe
Equipment
- Hand Mixer or Stand Mixer
- 9×5-inch Loaf Pan
Ingredients
- 2 cups heavy cream
- 14 ounces sweetened condensed milk (1 can)*
- 1 teaspoon pure vanilla extract
- ½ cup crushed graham crackers (about 4½ cracker sheets)
- ½ cup mini marshmallows **
- ½ cup mini chocolate chips ***
Instructions
- Using a stand mixer fitted with the whisk attachment (or a hand mixer), beat the heavy cream. Start on low speed and gradually work up to high speed, beating the cream until it forms stiff peaks, about 3 minutes.2 cups heavy cream
- Add the sweetened condensed milk and vanilla extract. Fold them into the whipped cream gently so the cream doesn’t deflate.14 ounces sweetened condensed milk, 1 teaspoon pure vanilla extract
- Add the graham crackers, mini marshmallows, and chocolate chips, and fold them in gently.½ cup crushed graham crackers, ½ cup mini marshmallows, ½ cup mini chocolate chips
- Transfer the mixture to a loaf pan or silicone ice cream tub, and wrap it tightly with plastic wrap.
- Place it in the freezer for at least 12 hours, preferably overnight.
- Scoop and serve with your choice of toppings.
Notes
- Add extra mix-ins to customize this ice cream! Try chopped cookies, candy bars, Oreos, or M&M’s.
- I recommend freezing your ice cream in a metal loaf pan for the best results. It will freeze faster that way.
- Cover the top of the ice cream with plastic wrap or wax paper pressed directly on the surface of the ice cream to help prevent ice crystals from forming.
- To soften hard ice cream, let it sit out on the counter for 10 minutes before scooping.
How to Make S’mores Ice Cream Step by Step
Prep: Gather the short list of ingredients for this homemade s’mores ice cream recipe. To crush the graham cracker sheets, I find it easiest to place them in a resealable bag, seal it, then use a rolling pin to crush them.

Whip the Cream: Use an electric hand mixer, or a stand mixer fitted with the whisk attachment for this step. Beat 2 cups of heavy cream, starting on low speed and gradually working up to high speed. Continue until the cream forms into stiff peaks — this should take about 3 minutes.

Add Ingredients: Then add 14 ounces (1 can) of sweetened condensed milk and 1 teaspoon of pure vanilla extract. Use a rubber spatula to gently fold them into the whipped cream. Be careful to make sure the cream doesn’t deflate.

Mix in the Add-ins: Next, add ½ cup of crushed graham crackers, ½ cup of mini marshmallows, and ½ cup of mini chocolate chips to the ice cream. Fold them in gently until well distributed. The measurements for the add-in ingredients don’t have to be exact, but I found this to be a good ratio.

Freeze the Ice Cream: Transfer the ice cream mixture to a metal loaf pan (or silicone ice cream tub), and wrap it tightly with plastic wrap. Press the plastic wrap directly on top of the ice cream so that it touches and covers the surface. This will help prevent ice crystals. Place it in the freezer to set. It will need at least 12 hours to freeze to a scoop-able consistency.

Serve: Once it’s set and frozen, serve scoops of s’mores ice cream any way you like! It’s so good as is, but we also like to make sundaes with hot fudge and more marshmallows. Let it sit on the counter for 10-15 minutes before serving, so that it’s easier to scoop.

How to Store
Store no churn s’mores ice cream in the metal tin wrapped in layers of plastic wrap; or in a freezer-safe container. It will keep in the freezer for up to 1 month.
