M&M Blondie Bars with Double the Peanut Butter
I love the nutty flavor and melt-in-your-mouth texture of my peanut butter blondies, but my kids always request I throw their favorite M&M candies into…well, everything. They were on to something though!
The addition of peanut butter M&Ms really turned these blondie bars into something special. Though of course regular M&Ms work just as well here! And my secret to making these extra moist? Extra egg yolks!

Egg Yolks Make All the Difference
The addition of egg yolks to my blondie recipe is the secret behind the super tender, melt-in-your-mouth texture. Yolks add richness and help bind the bars without making them cakey. If you’ve never tried this before, you’ll notice a big difference!

Notes
- Don’t let those leftover egg whites go to waste. Use them to make some marshmallow fluff!
- Make sure you pat the blondie batter into your prepared dish. This will make sure they cook evenly and will be easier to cut after they cool.
- Add extra M&M’s on top of the batter before baking the bars. This will give you a little extra sweetness and crunch.
- The center of your blondie bars should be chewy and moist, but not necessarily gooey. You want to make sure that the batter is cooked and not still raw in the center before removing them from the oven.
How to Make M&M Blondies Step-by-Step
Prep: Preheat your oven to 350°F, then spray a 9×13-inch baking pan with baking spray and set it aside. Melt the butter in 30-second bursts in the microwave.

Whisk the Dry: In a medium mixing bowl, whisk together 2¾ cups of all-purpose flour and 1¼ teaspoons of baking soda, then set it aside.

Mix the Batter: In a large mixing bowl, whisk together 1¼ cups of brown sugar, ½ cup of granulated sugar, ½ cup of melted salted butter, and ⅓ cup of vegetable oil. Then stir in 1 large whole egg, 2 large egg yolks, and 1 teaspoon of vanilla extract. Add in the flour mixture and stir just until the flour is incorporated. Gently fold in 1 cup of peanut butter M&M’s. Lastly, stir in ½ cup of creamy peanut butter.

Bake the Bars: Smooth the blondie batter into the prepared baking pan, and top with extra M&M’s. Bake M&M blondies in a 350°F oven for 16-18 minutes, or until the edges are golden brown. The center will still feel slightly unfinished. Don’t worry about that, because the residual heat will finish baking it.

Cut and Serve: The center of the bars will fall after several minutes on the cooling rack–this is normal. Once the bars have cooled, slice into 16 squares and enjoy!

How to Store, Freeze, and Reheat
Store leftover M&M blondies in an airtight container at room temperature for up to 3 days, in the refrigerator for up to 1 week, or in the freezer for up to 3 months. Let thaw overnight in the refrigerator before enjoying at room temperature or gently warmed in the microwave.
