These are obviously great cookies for Easter, but you can easily adapt them to enjoy any time of the year. Swap the chocolate eggs for Reese’s pieces for Halloween, or add some gummy sweets to serve them for kids’ birthdays.
Once your bird’s nest cookies have fully set, transfer them to an airtight container. They will keep well for up to 1 week at room temperature. I like to separate the layers with parchment so that they don’t stick together. They will still be good to eat after this time, but the noodles will start to get a bit soft.
Yes, these cookies freeze really well, so be sure to make a double batch! Simply place the set cookies into a Ziplock bag or airtight container and they will keep for up to 3 months. Let them thaw in the fridge before enjoying.

Ingredients
- 11 ounces butterscotch chips
- 9 ounces dark chocolate chips
- 6 ounces white chocolate chips
- 1 cup creamy peanut butter
- 2 tablespoons salted butter (¼ stick)
- 1 teaspoon pure vanilla extract
- 10 ounces chow mein noodles (2 (5-ounce) tins)
- 9 ounces candy-coated chocolate mini eggs like Cadbury

Instructions
- Line a baking sheet with parchment paper. Set aside.
- Set a heat-proof bowl over a saucepan filled with 1½-2 inches of water. Set over medium heat. Melt the butterscotch chips, dark chocolate chips, white chocolate chips, peanut butter, and salted butter.11 ounces butterscotch chips, 9 ounces dark chocolate chips, 6 ounces white chocolate chips, 1 cup creamy peanut butter, 2 tablespoons salted butter
