This easy homemade apple crisp with buttery oat and pecan crumble topping is a go-to fall dessert in my kitchen! The combination of tart Granny Smith apples, cinnamon, and oats is simple, satisfying, and perfect served warm with a scoop of vanilla ice cream.

Easy Apple Crisp with Oats

My classic apple crisp has the perfect balance of textures and flavors! The tart Granny Smith apples hold their shape and stay tender, while the crumble topping bakes up golden, crisp, and just sweet enough. Old-fashioned rolled oats give the crumble a hearty, chewy texture that holds up well during baking. And I added chopped pecans to enhance the crisp’s richness and provide extra crunch.

This simple apple crisp is an easier alternative to classic apple pie, and it’s an approachable recipe for even the most beginner bakers!

Use the Right Kind of Oats

Stick with old-fashioned rolled oats (not quick oats) for your apple crisp topping. Quick oats break down too much during baking, but rolled oats keep their shape, giving your homemade apple crisp that signature crispy, chewy texture on top.

Homemade Apple Crisp Recipe

This old-fashioned apple crisp is perfectly balanced with tart Granny Smith apples, cinnamon-sugar, and a buttery oats and pecan topping.

Ingredients

  • 3 cups sliced Granny Smith apples from 4 apples (¼-inch thick slices)*
  • ¾ cup granulated sugar
  • 1 tablespoon all-purpose flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon ground cinnamon

For the Topping

  • ¾ cup old fashioned oats
  • ¾ cup all-purpose flour
  • ¾ cup brown sugar
  • ½ cup unsalted butter melted (1 stick)
  • ½ cup chopped pecans

Instructions

  • Preheat oven to 350°F. Spray an 8×8-inch baking pan with nonstick spray. Set aside.

  • In a large bowl, use a spatula to fold together the apples, sugar, flour, salt, and cinnamon. Pour the apples into the prepared pan.

  • Make the topping: In a large bowl, using a spatula, fold the topping ingredients until large crumbles are formed. Spread the topping mixture over the apples.
    ¾ cup old fashioned oats, ¾ cup all-purpose flour, ¾ cup brown sugar, ½ cup unsalted butter, ½ cup chopped pecans

  • Bake for 35-40 minutes, checking at around 25 minutes. The crumble is done when the top is a golden brown color and the apples are soft.

Notes

*I like to use Granny Smith since they have a naturally tart flavor that balances out the sweetness of the topping. Cortlands will also work well.
Tips:
  • I prefer to use melted butter to get an evenly mixed crumble topping, but you can use softened butter to create a slightly more uneven result.
  • You can double the recipe easily. Just use a 9×13-inch baking pan.
  • For a slightly quicker version, try my Instant Pot apple crisp!
Storage: Store apple crisp in an airtight container in the refrigerator for up to 4 days.

How to Make Apple Crisp with Oat Topping Step-by-Step

Prep: Gather the list of ingredients for this apple crisp recipe. Preheat your oven to 350°F, spray an 8×8-inch baking pan with nonstick spray, and set aside.

Slice the Apples: Peel, core, and cut 4 apples into 1/4-inch thick slices (this should yield about 3 cups). I like to use Granny Smith apples for this crisp, but other types of apples can be used.

Mix the Filling: In a large bowl, use a spatula to fold 3 cups of sliced apples with ¾ cup of granulated sugar, 1 tablespoon of all-purpose flour, ¼ teaspoon of kosher salt, and 1 teaspoon of ground cinnamon.

Transfer: Pour the cinnamon-coated apples into the prepared 8×8 baking pan.

Make the Topping: In a large bowl, use a spatula to fold ¾ cup of old fashioned oats with ¾ cup of all-purpose flour, ¾ cup of brown sugar, ½ cup of melted unsalted butter, and ½ cup of chopped pecans. Combine until large crumbles form.

Bake the Crisp: Spread the oat topping mixture over the apples. Bake apple crisp in a 350°F for 35-40 minutes, checking it around 25 minutes. The crumble is done when the top is a golden brown color and the apples are soft.

Serve: Serve homemade apple crisp warm, with scoops of vanilla ice cream and caramel sauce drizzle.

How to Store and Reheat

I recommend storing apple crisp tightly covered with plastic wrap in the refrigerator for up to 4 days. Enjoy cold or reheated in the microwave for about 30 seconds.

    3/4 cup of sugar for the apples is really excessive. Is that a typo/error? Even if you have the biggest sweet tooth, 3-4 tablespoons will go a long long way.

    3/4 cup brown sugar for the topping can be reduced to half.
    These were the changes I made, hope it helps!
