These two-ingredient creamy pineapple popsicles take just minutes to make in the blender, and they’re perfectly sweet and fruity. I always make a big batch for barbecues and pool parties– the kids love them! They’re a big hit with adults, too!

Pineapple Popsicles Recipe
I love making Dole whips in the summertime, but they don’t keep super well in the freezer for more than an hour. So when I know I want to enjoy some later, I make these Dole whip popsicles instead. They have all the great flavor of a classic Disney Dole whip, but in a convenient popsicle form.
I make these pineapple popsicles with just 2 ingredients– pineapple chunks and vanilla ice cream– and they’re surprisingly rich and creamy. My kids love to eat them after a long day at the beach!

No Mold? No Problem!
To make pineapple Dole whip popsicles without a mold, you’ll need small paper cups, popsicle sticks, and aluminum foil. Pour the popsicle mixture into the cups (leaving a bit of room at the top to allow for expansion), cover the cups with foil, and poke the popsicle sticks through (the foil will help hold the sticks in place as they freeze). Place the cups on a baking sheet or other stable surface in the freezer and freeze for 3-4 hours, or until solid. When ready to enjoy, simply peel away the cups!

- High Powered Blender
- Popsicle Molds
Ingredients
- 4 cups chunked pineapple (about 1 whole pineapple)*
- 2 cups vanilla ice cream **
Instructions
- Place the pineapple into a blender. Blend until smooth. Add the ice cream and blend until smooth. Pour into popsicle molds. Freeze 1 hour.4 cups chunked pineapple, 2 cups vanilla ice cream
- Remove from freezer. Insert popsicle sticks. Freeze 4 hours, or until solid.
Notes
- If you need your popsicles to be dairy free, use dairy free ice cream.
- Blend the pineapple until it’s totally smooth for the creamiest texture.
- Be sure to let the popsicles freeze for at least 4 hours and up to overnight.
- Add a few tablespoons of rum to your popsicles to give them a delicious boozy kick. Adults only!
Variations to Try
I love the flavor of these pineapple popsicles, but you can easily use other fruits that you like to mix things up. Mango would work perfectly with this recipe!
How to Make Dole Whip Popsicles Step-by-Step
Blend the Fruit and Ice Cream: Place 4 cups of chunked pineapple into a blender. Blend until smooth. Add 2 cups of vanilla ice cream and blend until smooth. Pour the mixture into popsicle molds, and freeze for 1 hour.

Freeze the Popsicles: After 1 hour, remove the popsicles from the freezer. Insert popsicle sticks, then freeze for 4 hours, or until solid. I prefer to let mine go overnight whenever possible.

How to Store
Store Dole whip popsicles in the popsicle molds or in a Ziplock bag in the freezer for up to 1 month. Serve frozen.
