Let the Chocolate Cool Slightly
I’ve made more batches of no-bake chocolate cornflake cookies than I can count and ended up with everything from soggy cereal flops to rock-hard pucks. After plenty of trial and error with different chocolates, cereals, and chill times, I’ve learned the secret: let the melted chocolate cool for a minute or two before mixing it with the cornflakes. This simple step keeps the cereal crisp and the texture just right. I also like to test a tablespoon of the mixture before scooping the rest to make sure the chocolate isn’t too warm.

Instructions
- Cover 2 baking sheets with parchment or wax paper (make sure they fit in your refrigerator).
- Melt the chocolate in a stainless steel bowl set over a pot of simmering water.2 cups chocolate chips
- When chocolate is completely melted, take it off the heat and stir.
- Pour the chocolate over the cornflakes and carefully stir with a rubber spatula until everything is coated. VERY IMPORTANT: Make sure you let it cool off a little before you pour it over the cornflakes so the cereal does not get soggy.2 cups cornflakes cereal
- Use a tablespoon to make little heaps on the baking sheet until you have used up all the mixture. (If you want to make them smaller, you can use a teaspoon instead.) Top with nuts or sprinkles, if desired.Chopped nuts, Sprinkles
- Chill in the fridge for about 30 minutes.
Notes
- I like to melt my chocolate chips on the stovetop for the smoothest result, but you can melt them in the microwave in 30-second increments (stirring in between) if you prefer.
- After melting the chocolate, let it cool just slightly. It needs to still be warm enough to pour and mix, but if the chocolate chips are too hot, they’ll turn the cornflakes soggy.
- I use an even ratio of chocolate chips to cornflakes to make these, so it’s really easy to increase the amount and make as much as you want.

How to Make Chocolate Cornflake Cookies Step-by-Step
Prep and Melt the Chocolate: Cover 2 baking sheets with parchment or wax paper. Next, melt 2 cups of chocolate chips in a stainless steel bowl set over a pot of simmering water. Alternatively, you can melt the chocolate in the microwave in 30-second increments, stirring between. When the chocolate is completely melted, take it off the heat and stir. Let the chocolate cool slightly before moving onto the next step.

Pour the Chocolate: Place 2 cups of cornflakes cereal in a large mixing bowl. Once the chocolate has cooled slightly, pour it directly over the cornflakes.

Combine: Carefully stir/fold the chocolate into the cereal with a rubber spatula until everything is coated. Don’t be too rough, or the cornflakes will break up into dust.

Drop the Cookies: Use a tablespoon to make little heaps of the “dough” on the prepared baking sheets. A greased cookie portion scoop also works well for this.

Chill the Cookies: Top the cookies with nuts or sprinkles, if desired. Let them chill in the fridge for about 30 minutes, or until ready to serve.

How to Store
Store cornflake chocolate cookies in an airtight container in the refrigerator for up to 1 month. Since it’s not really cookie dough, they last a long time!
